Christmas Liquor...
Packed with the flavour of Christmas and bursting with those warm, rich autumnal aromas, this homemade alcoholic liquor is the perfect festive treat. Great as a winter warmer during those cold December evenings, this simple to produce indulgence makes the perfect seasonal gift.
Soft fruits are be the best. Use a combination of blackberries, cranberries, damsons, elderberries, figs, mangos, pears, plumbs, quinces and pomegranates. These are all in season from October. Avoid apples as these are best pressed. Avoid melons, these contain to much water and would dilute the alcohol. Use equal quantities, by volume, of each of the fruits you select. Peel mangos, pears, etc. Dice large fruits, the more surface area you expose to the spirit the better. Keep blackberries, cranberries, etc whole. Use vodka as the spirit. This will not impart any strong flavour to the fruit, unlike say brandy, will allow for a more naturally fruity colour. Add a couple of tablespoons of runny honey for sweetness. Squeeze a fresh lemon and orange over the fruit. Flavour with cloves, cinnamon, and nutmeg for that authentic winter warming aroma. Combine the ingredients in an airtight container, the fruit will not ferment so no risk of exploding bottles or jars. Keep until required, minimum of three weeks. Strain and bottle.
