 Feta Falafel Burger

A delicious burger suitable for both vegetarians and health conscious meat eaters.

Ingredients

To produce take 400g of prepared chickpeas, a small red onion, 80g of feta cheese, 50g of Sardinian vine tomatoes, a pickled jalapeno pepper, a few leaves each of fresh coriander and basil, an egg yolk and a little olive oil.

 Method

Heat a little olive oil in a pan. Dice the onion and fry until soft and golden. Chop the tomatoes and add to the pan, Bring to a simmer and add the basil. Stir, remove from the heat and pour into a food processor. Allow to cool. Add the prepared chickpeas, jalapeno pepper, feta cheese, coriander and egg yolk. Whiz to a thick paste. Add a few extra chickpeas if the mix appears too moist. With damp hands, shape 2 large burgers. Heat 1 tbsp of olive oil in a frying pan and cook the burgers, without moving or turning them, for 5 minutes until a golden brown colour. Turn and cook for a further 5 minutes until golden on both sides. Serve as required.
