I was first introduced to the Global range of kitchen knives in 1995, and have been using them ever since. The knife roll containing my collection of Sabatier knifes is
gathering dust at the back of some cupboard. Global are perfectly balanced and always superbly sharp if correctly maintained with a whetstone and diamond steel. I would avoid the Global ceramic steel however, it will shatter into several useless pieces if you happen drop it. Choose wisely and you should be able to manage with only three or four Global’s in your collection along with a steel and stone. Some items in the range are extremely specialised while others are versatile and well worth the investment. The only problem I have had with my Global knifes is, strangely enough, that they are too sharp! I have lost count of the number of knife rolls and assorted cases they have managed to destroy, slicing through thread and fabric every time one is removed or replaced. Oh well, quality costs…

G Series GS Series GF Series GSF Series
G Series This is the classic collection of larger Global knives, used for general preparation.
GS Series This is the classic collection of small and medium-sized knives, used for general preparation work. This series also includes some specialist knifes. GF Series This series contains a collection of larger forged knives, used for general preparation and favoured by many professional chefs.
GSF Series These are smaller knives with solid handles.
Global knives are produced by the Japanese company Yoshikin, using the finest quality high carbon stainless steel CROMOVA 18. This has been designed exclusively for the
manufacture of Global knives. The steel is hard enough for the knives to hold the acute angled cutting edge while retaining sharpness. It is also soft enough to allow easy and effective sharpening. The CRO in CROMOVA 18 stands for chromium while the 18 indicates the percentage of chromium within the steel. It is this relatively high percentage of chromium that contributes to Global's excellent stain resistance. However care should still be taken to keep your knives stain and rust free. The MO stands for molybdenum while the VA indicates vanadium, both metallic elements that give the knife rigidity and strength. From its modest beginnings Global has developed into one of the most successful manufactures of professional kitchen knives, a world wide brand. Crafted by hand in Yoshikin's factory in Niigata, Japan, Global knives are manufactured to an extremely high and exacting standard. The cutting edge of a Global knife is large and prominent, easily seen with the naked eye and extending a quarter of an inch or more up from the tip of the knife. To balance the knife Global uniquely have a hollow handle which is filled with just the right amount of sand to create the correct balance against the blade. Global uses this method rather than a full tang and bolster to balance the knife for two reasons;
firstly it is a far more precise method of balancing and secondly Asian knives typically do not have bolsters, they are regarded as a hindrance to both cutting and sharpening. Another unique feature of the Global knife is the smooth contouring and seamless steel construction. This eliminates any potential food and dirt traps offering high levels of safety and hygiene. The history of Global begun thousand years ago, Japanese swordsmiths developed the high art of sword making to provide strong, sharp blades for the Samurai, the feared warrior caste. Today, continuing the Samurai sword tradition, Japanese craftsmen are producing knives of the highest qualityGlobal knives are manufactured by Yoshikin in Niigata, Japan. In the beginning Global knives were first designed in 1985 by Komin Yamada. When Komin Yamada was commissioned for this task his mandate was to develop a range of knives that was truly new and revolutionary, using the best materials available and the latest manufacturing techniques. He was to fashion a series of kitchen knives which would appeal to the professional and amateur chef alike, be comfortable and easy to handle, and meet their most demanding requirements. Global features two innovative features, of these are their edge and the way in which they are balanced. The most important feature of any knife is its edge, and the Global edge is truly its signature. The majority of the Global knives are sharpened or ground on both sides of the blade, just like Western style knives.
