 Lemon Sole With Salsa Verde

So simple, so delicious, so healthy, so make it.

Ingredients

To produce take 2 fillets of fresh lemon sole, a clove of garlic, a fresh lemon, 25g of walnuts, 20g of capers, a sprig of fresh parsley, 2 tbsp of extra virgin olive oil, sea salt and cracked black pepper.

 Method

Preheat a grill. Zest and juice the lemon. Crush the walnuts. Coarsely chop the garlic, capers and parsley. Mix all of these ingredients together with a tablespoon of olive oil. Add a little cracked pepper. Prepare the lemon sole fillets. Brush with a little olive oil. Season with sea salt. Grill for 2-3 minutes on each side, until firm to the touch. Place on a plate and spoon over the salsa verde. Serve with minted new potatoes and wild rocket drizzled with balsamic vinegar.
