 Cajun Seasoning

A seasoning used in Cajun cookery, usually rubbed into meat or fish and allowed to marinate before cooking

Ingredients

Garlic, onion, paprika, peppercorns, cumin, mustard seeds, cayenne pepper, oregano, thyme and salt.

 Method

To produce simply toast the garlic, onion, peppercorns and mustard seeds in a dry pan. Place into a mortar with the remaining ingredients and grind to a coarse mixture. Use as required.
